ROAST POTATOES These can be cooked around the joint if you are cooking a roast dinner, or in a baking tin, with a little hot fat, to cook on their own. Allow 2-4 potato pieces per person. Peel the potatoes and cut them into evenly-sized pieces. Put them in a saucepan of hot water, bring to the boil and simmer for 2-3 minutes. Put a little fat in a roasting tin. (Use lard, margarine, dripping or oil. Do not use butter on its own as it burns and goes brown.) Heat the tin in the oven (400-425°F/200-220°C/Gas Mark 6-7). Drain the potatoes and shake them in the pan over the heat for a moment to dry them. Put the potatoes into the hot roasting tin, but be careful that the hot fat does not spit and burn you.
